What began as growing Shiitake mushrooms on 300 logs has grown to a laying yard of over 1,700 logs for Shiitakes, beds of Wine Cap and Blewit, logs and stumps growing Oysters and Chestnuts. Site selection is one of the first things to be analyzed when deciding what crop to grow. With the vast majority of this farm being covered in mature hardwoods growing mushrooms outdoors through log cultivation in the shade of trees was a way to complement the existing resources.
In 2017, the farm began indoor cultivation of Oyster mushroom varieties. The mushrooms are delicious, and healthy protein options also loaded with Antioxidants and Vitamins. No chemicals of any kind are used in the production or harvesting of the mushrooms. Today they also grow Lion’s Mane & Almond mushrooms.
